Protozoa, Bacteria, Spinach, and You….

A very interesting article has just been published in Applied and Environmental Microbiology on the role of protozoa in essentially “gluing” bacteria to the surfaces of lettuce, spinach and possibly other vegetables. Why is this interesting and why is it important? Because, it could help explain why we have seen an increase in the rate of food-borne illnesses attributed to produce in recent years.
